Rich Chocolate Fluffy Rice Cake
Ingredients:
- 6 whole eggs
- 90g glutinous rice flour
- 20g ecoBrown’s Pure Wholegrain Rice Powder
- 80g caster sugar
- 5g instant yeast, dissolved in 1 tbsp water
- 15g cocoa powder
- 10g rice bran oil
- 15g milk powder
- pinch of salt
Method:
- Sift together all powder-based ingredients.
- Whisk together eggs and sugar until thick and creamy.
- Fold in sifted ingredients and pour into a 6” x 6” rectangle pan lined with parchment paper.
- Preheat oven to 160ºC and bake the cake for 40 minutes or until cooked.
- Let cool and serve.
